Trypsin powder is a kind of protease, EC3.4.21.4. In vertebrates, it is characterized as a digestive enzyme. It is synthesized in the pancreas as a precursor of the enzyme trypsinogen. Trypsin was secreted as the component of pancreatic fluid, and was decomposed into activated trypsin restricted by enterokinase or trypsin, which was an endopeptide enzyme that could cut off the carboxyl side of lysine and arginine residues in the polypeptide chain. Trypsin not only has the characteristics of digestive enzymes, but also can restrict the decomposition of the precursors of other enzymes such as chymotrypsin, carboxypeptidase and phospholipase, with activation characteristics. As the most specific Trypsin, Trypsin became an indispensable tool in determining the amino acid arrangement of proteins.
