Tannase powder is also known as ellagitannase. 1. Tannase powder is an extracellular enzyme produced by Aspergillus niger. The enzyme acts as a lipase and breaks down tannins into ellagic acid.Tannase CAS 9025-71-2 can be used for tannin removal in the fruit juice, tea beverage and beer industries.
2. Tannase Raw Materials is mainly used in the production of instant tea to break down the tannins to improve cold solubility of the finished product and to avoid turbidity on cooling after hot solubilisation.

Physicochemical Property of Tannase powder

White powder. The optimum pH value is 5.5～6.0 and the optimum temperature is 33℃. The main function is to make tannin decompose into ellagic acid, glucose and gallic acid with water.

Production methodprocess of Tannase powder

Generally, Aspergillus niger or Penicilliumglaucum are cultured in Czapek's medium (CzapekDox) containing 2% ellagic acid and 0.2% casein hydrolysate, the mycelium is taken out, and then dried by acetone precipitation to make Tannase powder.
