Rutin powder is the rutin side of the flavonol compound quercetin, which is a flavonoid compound extracted from plants. It is color unstable in alkaline foods and has antioxidant ability. Rutin CAS 153-18-4 can improve the light resistance of pigment preparations in ethanol, prevent the gradual disappearance or change of flavor, and improve its antioxidant capacity when combined with vitamin E.
