Allicin powder (also known as diallyl disulphide) is a kind of light yellow powder or colorless to light yellow oily liquid with garlic odor, which is not easily soluble in water and easily soluble in organic solvents. Allicin is unstable and loses its antibacterial activity when exposed to heat or alkali, but is not affected by dilute acids. Light yellow oily liquid. The boiling point is 80-85℃ (0.2kPa), the relative density is 1.112 (20/4℃), and the refractive index is 1.561. Soluble in ethanol, chloroform or ether. The solubility in water is 2.5%(mass)(10℃), the pH value of its aqueous solution is 6.5, and the oil precipitate is formed when standing. It is miscible with ethanol, ether and benzene. Unstable to hot bases, stable to acids.
