Sodium dehydroacetate powder is white or light yellow, odorless, tasteless, easily soluble in water, difficult to dissolve in ethanol and other organic matter. Melting point is 190°C, light resistance, good heat resistance. The solution is heated at 120°C for 2 hours and remains stable. The aqueous solution appears neutral or slightly alkaline. Sodium dehydroacetate is a kind of food preservative with broad spectrum and strong bacteriostatic ability, which has a particularly strong inhibition ability to mold and yeast. Under the same amount of addition, the antibacterial effect is several times or even dozens of times higher than the widely used sodium benzoate and potassium sorbate. What is particularly valuable is that the inhibition of acid-producing bacteria, especially lactic acid bacteria, is very small.

Sodium dehydroacetate white or nearly white crystalline powder. Odorless, slightly special taste. Melting point 109 ~ 110℃. Soluble in water, propylene glycol and glycerol. It is slightly soluble in ethanol (1%) and acetone (0.2%). Good light and heat resistance. The aqueous solution remained stable after 2h heating at 120℃. The aqueous solution is neutral or slightly alkaline.
