• (1) Centrifugation of fermentation broth: The glutathione fermentation broth with a fermentation level of at least 1650 mg/L was centrifuged after going down the tank, and the centrifugation speed was 3,000~5,000 rpm, and the time was 5~lOmin, to obtain a wet yeast cell body;
• (2) Hot water wall-breaking: add 1 part of wet yeast cell body to 6~10 parts of boiling water in the extraction tank, stirring, stirring speed of 300~350rpm, when the temperature of the extracted liquid reaches 85~95°C, hold for 10~15minutes, stop the extraction, pour out the extracted liquid, and cool the extracted liquid to room temperature in a water bath;
• (3) Centrifugation of extract: centrifuge the extract at 3000~5000rpm for 5~l0min, remove the yeast residue, and obtain the extract containing GSH;
• (4) pH adjustment: Add acid into the extract after centrifugation to keep the material system in an acidic environment of pH 2.5~3.5, which can precipitate some impurities and keep GSH in a stable state to prevent oxidation;

• (8) Decompression concentration: Concentrate the GSH solution under vacuum of -0.07~-0.098Mpa and temperature of 55~65°C under decompression, so as to achieve a GSH content of more than 400mg/ml;
• (9) Crystallization: Add isopropyl alcohol or ethanol to the glutathione concentrate to make the organic solvent content reach 60%~80%, adjust the pH value to 2.90~3.0, and crystallize at 0~4°C;
• (10) Wash the crystals: wash the crystals with acetone solution with a concentration of 70% to 90% by volume;
