Arabic gum powder, also known as gum Arabic, is a natural vegetable gum that occurs in semi-desert regions south of the Sahara Desert in Africa in yellow to fawn translucent patches, or white to pale yellow particles and powders. The lighter the color, the better the quality, the fresh appearance is smooth, the inside is transparent, odorless, tasteless, easily soluble in water, can be dissolved in a large number of hot and cold water, forming a clear and sticky thick liquid. It mainly includes gum aldose, galactose, glucuronic acid and so on. Arabic gum is widely used in food, medicine, cosmetics and other industries. It is used in candy making to prevent recrystallization and thickening of candy.

Arabic gum light white to yellowish-brown translucent patches, or white to orange-brown granules or powder. Odorless, tasteless. Form a stable coacervate layer with gelatin or albumin. Free Arabic acid is obtained by precipitating it with acidic alcohol.
