Or by sodium trimetaphosphate with acetic anhydride (≤10%) or vinyl acetate (≤7.5%) and starch through a comprehensive reaction. Acetylated Distarch Phosphate is a white powder, odorless, tasteless, soluble in water, insoluble in organic solvents. Compared with the original starch, the solubility, swelling power and transparency are obviously improved. The aging tendency is obviously reduced and the freezing stability is improved. It can resist heat and acid. Acetylated Distarch Phosphate is an ester organic matter and can be used as a food additive.
