Sodium Magnesium chlorophyllin powder is an edible natural pigment. It is obtained by replacing magnesium ions in plant chlorophyll with copper ions. Dark green powder with metallic luster, extracted from silkworm sand bell, odorless or slightly odorless. Soluble in water, insoluble in oil. The aqueous solution is blue-green, transparent and precipitate-free. Acid will precipitate out. Slightly soluble in ethanol. Its light resistance is stronger than chlorophyll, heating to 110℃ above decomposition. Can be used for pastry coloring, limited to 1g/kg. Sodium Magnesium chlorophyllin is a semi-synthetic pigment, which is between synthetic pigment and natural pigment in terms of stability, but its potential function is richer and its comprehensive value is higher.
