Physicochemical Property of Curdlan powder
Curdlan white to nearly white powder, almost odorless. l% water suspension heated to 54 ~ 78℃, and then cooled to below 40℃, can form a gel, the gel reheated to 54 ~ 78℃, still soluble, this is a heat reversible gel.
Production methodprocess of Curdlan powder
Curdlan powder is produced by the non-pathogenic and non-toxic strain alcaligenes or actinomycete of Gram-negative Agrobacterium by pure culture and fermentation. The condensed polysaccharide accumulated in the medium is dissolved with alkali, the bacteria are separated, and then neutralized, concentrated, precipitated, washed, dried and crushed with acid.
