Often contains 1 molecule of crystalline water, hygroscopic, soluble in water, decomposition in hot water. Insoluble in ethanol and carbon disulfide.

Ammonium carbonate used as raw material of baking powder, various ammonium salts, buffer, printing and dyeing additives, fertilizer and analytical reagent. Edible ammonium carbonate is used as a buffer, a neutralizer, a leavening agent, and a fermentation promoter (in the manufacture of wine).
