Melting point is 190°C, light resistance, good heat resistance. The solution is heated at 120°C for 2 hours and remains stable. The aqueous solution appears neutral or slightly alkaline. Sodium dehydroacetate is a kind of food preservative with broad spectrum and strong bacteriostatic ability, which has a particularly strong inhibition ability to mold and yeast.
